Mango Parfait


This is a quick and light dessert for a lunchtime fare.  The naturally sweet taste of mangoes and cream makes a delightfully light and fresh way to finish lunch.


INGREDIENTS


4 large mangoes - flesh removed and chopped

1 cup heavy whipping cream

1 cup powdered sugar or ½ cup of Monk sugar

Mint leaves to decorate



DIRECTIONS


Puree mango flesh until completely smooth.  Pour whipping cream into a bowl that has been refrigerated for 10 or so minutes; add sugar and whisk together until soft peaks form.  Spoon mango puree into 4 stemmed glasses about 1/3 rd of the way; spoon whipped cream on top of puree (⅓ rd) of the way; spoon mango puree (⅓ rd) and end with whipping cream for the final layer.  Drizzle some of the puree on top of the cream and garnish with a sprig or two of mint leaves.  It’s that simple.  Done and finished.
