Pumpkin Muffins with Cream Cheese Frosting
These muffins are a pleasurable mid-morning snack or as a dessert with frosting. Just add a handful of grapes or a few blueberries.
INGREDIENTS
4 eggs 2 cups sugar 1 cup vegetable oil 1 can pumpkin
3 1/4 port soaked raisins (optional) 2 cups flour 1 teaspoon salt 2 teaspoon cinnamon 2 teaspoon baking soda 1 teaspoon nutmeg
DIRECTIONS
Combine, eggs, sugar and oil. Beat well. Add in pumpkin. In another bowl mix together the flour, salt, cinnamon, baking soda and nutmeg and mix well. Add the pumpkin mixture to the flour mixture. Line muffin pan with baking cups, fill to top and bake at 350 degrees for 20-25 minutes.

FROSTING 3 ounces cream cheese, softened 4 tablespoons melted butter 1 teaspoon vanilla 1-½ cups powdered sugar
DIRECTIONS Mix above ingredients together and spread on completely cooled muffins.
