Sweet Cinnamon Apples


I often serve this dish with friends after an evening at the theater. We come home for simple chatter and board games but we can never finish the evening without these warm cinnamon apples, served over ice cream and a splash of port.

INGREDIENTS:

4-5 Granny Smith Apples (choose firm unblemished apples)

1 tablespoons of freshly squeezed lemon juice

½ teaspoon cinnamon

1 stick cinnamon

½ cup Agave Syrup ( this syrup is slightly less sweet than brown sugar)

⅛ teaspoon nutmeg

2 -3 ounces unsalted butter

¼ cup cold water

1 teaspoon cornstarch

Pinch of salt

INSTRUCTIONS:

Wash, peel, core and slice apples. Sprinkle with lemon juice to prevent discoloring. Melt butter in a large skillet over medium heat. Add apples and remaining ingredients. Stir to completely coat apples with spices and syrup. Cover and lower heat. Cook stirring constantly until apples are tender but still holding the shape of each slice. Mix water and cornstarch together and drizzle over apples. Cook for a further 2 minutes until sauce is translucent and slightly thick. Cool and serve with hot cereal or simply enjoy it served from a parfait glass with vanilla ice cream.
