Fresh Cucumber Tuna Salad
INGREDIENTS
2 12 oz cans of solid white tuna in water 2/3rd cup of organic mayonnaise (Spectrum brand) 3 green onions finely chopped 2 Tablespoon finely chopped red onions, soak in white vinegar, a little salt and three ice cubes for five minutes and drain into a sieve 1 Teaspoon celery salt 2 stalk celery very thinly sliced 2 Tablespoons of capers ½ Teaspoon coarsely ground black pepper 2 Tablespoons freshly squeezed lemon juice
DIRECTION
Drain tuna fish through a sieve and press lightly with back of spoon. In a small mixing bowl break up tuna with fork. Add above ingredients except red onions and lemon juice. Fold in ingredients with large spoon. Add lemon juice and red onions. Taste and adjust with salt. Sprinkle with smoked paprika.
Several times a year during the summer, my best friend takes her family on road trips and invariably, I prepare a picnic basket for them using this recipe with ciabatta bread. They love it!
