Fried Dumplings

Fried dumplings go well with most Caribbean meals especially Salt Cod. It's also a great addition to a picnic basket. You can never just have one dumpling!
INGREDIENTS
2 cups of all purpose white flour 3 teaspoons baking powder 2 tablespoons yellow cornmeal 3 tablespoons of white sugar 2 oz of unsalted butter ½ cup + 2 tablespoon of very cold water Pinch of salt Oil for frying

DIRECTIONS Put flour, baking powder, cornmeal, sugar and butter in blender and pulse about 8 times until mixture resembles large breadcrumbs. Turn on blender and keep running while you add cold water. When dough comes away from sides and forms into a ball, turn out onto a floured surface. Knead for a few minutes until it’s no longer sticky. Break off pieces of dough about the size of a golf ball. Roll each piece into a ball and then flatten. With two cups of flour you should average 16 balls.
Heat 1 cup canola oil in wok. When almost bubbling, turn to medium heat add enough dumplings 6-8. Please keep a watchful eye. When first side is golden turn to other side. Place each batch on paper towel.
