Caribbean Elixir


This soup has many healing properties that strengthen your body and opens your appetite. This is great if you are coming down with the flu or cold, or if you are already fighting through it. This Chicken soup when prepared in combination with chicken feet (claws) is recognized as a common immune system booster.

The benefits of chicken feet are numerous, i.e. it contains such nutrients as protein and calcium which are extremely important as they help regenerate nerves, muscles and bones.

INGREDIENTS

6 Chicken legs or 8 chicken feet 1 inch piece ginger cut in thin strips 2 bay leaves Three sticks celery 1 large vidalia onion 1 tablespoon italian flat leaf parsley Lemon peel about 4 inches long 2 chicken bouillon cubes Three sprigs of fresh thyme 1 inch piece of fresh turmeric peeled and cut in thin strips or ½ teaspoon powdered turmeric 3 quarts organic chicken broth ¼ teaspoon ground cayenne pepper Adjust seasoning with salt

DIRECTIONS

Wash chicken legs - remove skin from five legs. Put 1 tablespoon of olive oil in a soup pot and add chicken at medium heat for 3-5 minutes. Add remaining ingredients except parsley and cayenne pepper. Simmer for 45 mins., taste and adjust seasoning with salt. Add cayenne pepper and parsley. Strain elixir through fine sieve and paper towel.
