Jerk Barbecue Chicken Wings


These lip smacking and finger licking jerk wings are essential to any Caribbean gathering!

When friends come through the door, they hug me and whisper "Where di wings dem?" or translated from Caribbean slang "Did you cook the wings?"

INGREDIENTS:

2 lbs chicken wing drumettes ½ cup white vinegar 1 tablespoon garlic powder 1 tablespoon onion powder ½ lemon squeezed ½ teaspoon salt 1 tablespoon + 1 teaspoon olive oil 4 tablespoons Mild Walkerswood Jamaican Jerk seasoning (available in most supermarkets) or any other wet Jerk seasoning of your choice

DIRECTIONS

Wash wing drumettes with vinegar and water. Dry with paper towel. Add remaining seasoning. It is very important at this phase to wear plastic gloves to massage seasoning into chicken. Marinate in refrigerator overnight. Preheat oven at 450 degrees. Line baking tray with parchment paper. Remove wings from marinade and place ¼ inch apart on baking tray. Brush with reserved marinade. Bake for 30 minutes then turn wings over and brush with remaining marinade. Bake for a further 15 minutes. These wings are delicious as snack food or can be served as a meal with Basmati white rice, fried plantain and a fresh garden salad.
