Agave Glazed Sweet Potatoes With Star Anise and Cinnamon
This is a great accompaniment to a Thanksgiving feast. The fragrance from the cinnamon and the anise is pleasing to the senses. This mouthwatering dish is always a tremendous hit!
INGREDIENTS:
4 medium size sweet potatoes 1 stick cinnamon ½ teaspoon cinnamon 4 star anise ¼ cup butter 1 orange cut in half ½ cup agave syrup
DIRECTIONS:
Wash, peel and cut sweet potatoes in half lengthwise. Cut crosswise into thirds. Place in a large mixing bowl and add all ingredients except orange and butter. Squeeze one half of orange over potatoes and spices, cut the remaining half into four quarters and add to the bowl. Melt butter and add to the bowl. Stir together to coat well. Bake at 425 degrees uncovered for 20 minutes. Remove from oven and reduce temperature to 350 degrees. Cover with aluminium foil and bake for an additional 30 minutes until done.
